Jesenski piknik / Autumn picnic

Neki ljudi jednostavno dođu neplanski i naglo u tvoj život. Provodiš vrijeme s njima, ne razmišljaš previše niti očekuješ, a s vremenom ih sve bolje upoznaješ, prolanaziš zajedničke teme i mišljenja. I onda, dok se ni ne snađeš, čuješ se s njima par puta dnevno, povjeravaš im se, konzultiraš, jadikuješ, te ispijaš kave, gledate GBBO zajedno, donose ti nešto za pojesti pod pauzom i još plate kavu. I što sve ne.

U početku ovo je bio ljetni piknik. 
Brzo smo se A. i ja dogovorile. Budimo iskreni, ona je dala prijedlog, a ja sam odmah pristala.
Nije rijetkost da se same družimo, no rjeđe same gozbimo bez muških pripadnika. 

Što više ljudi to bolje, no ne dogodi se rijetko da svatko vuče na svoju stranu, pa od idiličnog druženja uz hranu dođe do recimo... Ne toliko idiličnih raspoloženja. :D Pogotovo ako je riječ o muško-ženskom društvu.

Dok smo svaka razmišljale što ćemo ukusno spremiti, vrijeme je prolazilo, početak školske godine se približavao i A. se morala vratiti u gradić u kojem radi. Shvatile smo da nećemo uspjeti održati piknik, pa smo se dogovorile da ćemo na proljeće.
Rekla sam joj da je u redu i da nije nikakv problem, no zapravo sam bila tužna. Ne samo zbog piknika, nego i zbog druženja.
Prvi petak u novoj školskoj godini me je nazvala i pitala što radim večeras i jesam li za kavu. Naime, dobila je posao u našem gradiću i seli se nazad. Bila sam presretna zbog nje, a nakon par sati sjetila sam se i našeg neodržanog piknika te kako ćemo sada imati prilike.

Mozganje je završilo i odluka je pala. Anja je rekla praviti prefine zdravije calzone,a ja desert u čašicama iz glave.

Zdravije Calzone

250 g integralnog brašna ili brašna bez glutena
3-5 g smrvljenih lanenih sjemenki
sol, papar
majčina dušica, origano
mjera pola vode pola zobenog mlijeka (ili rižinog, sojinog...a tko tolerira laktozu, može i obično, ali malomasno)
 Pomiješajte sve suhe sastojke. nije ih bitno prosijati, iako možete to učiniti. Krupni dijelovi zrna koji vam ostanu iz brašna slobodno ubacite u smjesu.

Postupno dodavajte smjesu vode i mlijeka dok ne dobijete dovoljno gusto rijesto da se odvaja od stijenki i da ga možete mijesiti. Ako vam ostane još smjese vode i mlijeka, dodajte to smoothieju kojeg možete poslije napraviti za okrijepu.

Dobro umijesite tijesto te ga pokrijte kuhinjskom krpom i ostavite na toplom jedan sat.
Što se tiče punjenja, potpuno ga prilagodite sebi. Koristila sam sljedeće:

pileća salama
(pasirana) rajčica
svježi sir
tikvica
kukuruz
gljive
začini po želji

Nakon što se odmorilo, tijesto rasporedite u nekoliko manjih kuglica te kuglice razvaljajte na 2-3 mm debljine. Napravite od svake kuglice krug veličine dlana. Zatim jednu polovicu kruga, uz to da ostavite mjesta pri rubovima, premažite rajčicom koju ste sami pasirali i začinili (sol, papar, origano), a možete iskoristiti i već kupljenu pasiranu rajčicu.
Zatim posložite tikvice naribane na ploške, salamu (preskočite ovad dio za vege opciju), svježi sir, a na vrh stavite kukuruz i gljive. Dodatno začinite po želji. Zatim preklopite krug i dobro utisnite krajeve jedan u drugi da se tijesto ne bi odvajalo tijekom pečenja. Prstima tijesto možete i zavrnuti na lijep vizaulani način.

Također, gornji dio calzonea prije preženja zarežite nožem nekoliko puta. Premažite gornji dio razvodnjenim razmućenim jajetom. Od ostatka jajeta iduće jutro napravite ukusnu kajganu.

Calzone posložite na lim obložen papirom za pečenje i pecite u prethodno zagrijanoj pećnici na 200°C oko pola sata, a nakon što calzone izvadite, ostavite ih na limu, poškropite vodom i prekrijte kuhinjskom krpom kako bi ostale meke nakon što se ohlade.

Cheesecake u čašicama sa šipkom

220 g integralnog keksa
60 g pšenično-rižinih pahuljica (Flakes & Joghurt iz Kauflanda)
1 žličica šećera u prahu
1 žličica cimeta

450 g Dukat grčkog jogurta
30 g meda
2 žličice vanilin šećera
240 ml slatkog vrhnja

Kekse stavite u vrećicu i usitnite s drvenim batom. Neka ostane i krupnijih komada.
Isto učinite i s pahuljicama.
Sve izmiješajte i dodajte šećer u prahu i cimet.

Ako vam se med kristalizirao, uronite posudu s medom u vruću vodu, no pripazite da voda ne uđe unutra.
Med i vanilin šećer dodajte grčkom jogurtu.
Sa strane mikserom ili ručno pjenjačkom umutite slatko vrhnje.
Nemojte pretjerati, želimo samo malo prozračnosti u grčkom jogurtu.

Šlag dodajte smjesi grčkog jogurta te umiješajte spatulom pazeći da ne izbijete zrak.

 Napunite čašice ili posudice mrvičastom smjesom keksa i pahuljica te pritisnite s dnom uske čaše.
Na kekse dodajte smjesu grčkog jogurta, pa zatim ponovite još jednom i završite sa šipkom.

Osim već poznatog čišćenja šipka tako da odrežete vrh i udarate ga drvenom kuhačom po 'stražnjici' iznad velike posude, postoji i ovaj zanimljiv način koji sam probala i zaista je učinkovit.

without expecting or thinking too much, and with time you get to know them better, you find similar thoughts and interests. And then you don't get to turn around, and you're talking to them a few times a day, you share secrets, you're each other's shoulder to cry on, you watch GBBO together, and during the work break they bring you food and pay you for coffee. And whatnot.
In the beginning, this was supposed to be a summer picnic.
A. and I quickly made arrangements. Let's be honest: she suggested it, and I immediately said yes.
We often hang out together, but we rarely get to dine together without our male counterparts.
The more the merrier, but often everybody has their own opinion, and from an idyllic hanging out with food we get to... Not so idyllic moods. :D Especially when it comes to male-female company.
While we were thinking what to make, time went by, the school year began and A. had to go back to the town where she worked. We realized we won't get to do the picnic, so we postponed it to spring.
I told her it's okay and that it's not a problem, but in fact I was sad. Not only because of the picnic, but because of the hanging out part too.
On the first Friday of the new school year A. called me to ask me if I'm free to have some coffee. She got a job back in our town and she was moving back. I was over the Moon because of her, and after a couple of hours I remembered our scheduled picnic and how this will be the chance to get it done.
We did some brainstorming and made arrangements. A. agreed to make tasty healthy calzone, and I would make desserts-in-a-cup which I came up with. 

Healthy Calzone

250 g whole-wheat flour, or gluten-free flour
3-5 g crushed flax seeds
salt
pepper
thyme
oregano
half-and-half mix of water and oat milk (or rice/soy milk... and for those who are lactose tolerant, you can also use regular low-fat milk)

Mix all of the dry ingredients. You don't have to sift them, but you can do it.

Slowly add the half-and-half water and milk mix until the dough is thick enough to not stick to the sides of the bowl anymore, and you can knead it. If you have some remaining half-and-half mix left, set it aside for a refreshing smoothie you can make afterwards.

Knead the dough well, cover it with a kitchen towel and leave it aside in a warm place for an hour.
As for the filling, adjust it to your needs. I used the following:
chicken salami
tomato paste
low-fat cottage cheese
zucchini
corn
mushrooms
seasoning
After the dough has rested, divide it into a few smaller balls, and spread the balls into circles 2-3 mm in thickness. Make them the size of your palm. Then spread the tomato paste over one half of the circle, but keep in mind to leave some space next to the edges. You can make the tomato paste yourself (and season it with salt, pepper, oregano), or you can buy it pre-made.
Then add the sliced zucchini, salami (skip this part for the vege option), low-fat cottage cheese, and top it off with corn and mushrooms. Add spices as you wish. Then fold the circle over and press well into the edges so the dough doesn't open up while it's baking. You can twist the ends of the dough for a nice effect.

Also, slice a couple of times the top part of the calzone. Spread each calzone with a watered down beaten egg. Make scrambled eggs the next morning from the beaten eggs you have left.

Place the calzone on a tin covered with baking paper and bake in a pre-heated oven at 200°C about half an hour. After you take out the calzone, leave them on the tin, sprinkle them with water and cover them with a kitchen towel so they remain soft after cooling down.

Cheesecake-in-a-cup with hip

220 g of whole-wheat cookies
60 g of wheat-and-rice flakes (Kaufland's Flakes & Joghurt)
1 teaspoon of powdered sugar
1 teaspoon of cinnamon
450 g Dukat Greek Yoghurt
30 g honey
2 teaspoons of vanilla sugar
240 ml of whipping cream

Put the biscuits into a plastic bag and beat them with a wooden hammer. Leave some bigger pieces.
Do the same with flakes.
Mix everything up and add the powdered sugar and cinnamon.

If the honey has crystallized, put the jar of honey into hot water, but make sure none of it gets into the jar.
Add honey and vanilla sugar to the Greek yoghurt.
Mix the whipping cream on the side.
Don't overdo it, we want just a little bit of airiness in our Greek yoghurt.
Carefully add the whipping cream to the Greek yoghurt, mixing with a spatula.
Fill the cups or tins with the crumbly mix of biscuits and flakes, and press them down with the bottom of a tall glass.
Add the mix of yoghurt, and then repeat, ending with hip.

Except for the well-known hip extraction by cutting off the top and beating it at the bottom with a wooden spatula above a bowl, there is another interesting way which I've tried out, and it turned out to be really efficient.
